Finnish blueberry pie

Ingredients

Dough:
Butter 100 g
Wheat flour 1 tbsp.
Oat flour (ground rolled oats) 1 tbsp.
Sugar 1/2 tbsp.
Egg 1 yolk
Baking powder 1 tsp
The water is cold 2 tbsp. l.
Ground cardamom / cinnamon 1 tsp
Filling:
Blueberry 1.5-2 tbsp.
Cottage cheese 250 g
Eggs 1 pc. + 1 protein
Sugar 1/2 tbsp.
Starch 2 tbsp. l.
Vanillin 1 tsp

Cooking method

  • The girls, visited their dad outside Tver, gathered blueberries there. And now it inspired me: I baked blueberry pies for two days!
  • You can cook both in the oven and in a slow cooker. I had to cook in panasik in cartoon. It turned out great!
  • Dough:
  • Chop cold butter, add both flour, sugar, baking powder, coriander or cinnamon (to taste)
  • Finnish blueberry pie
  • Mix the components until fine crumbs are obtained.

  • Add yolk, cold water and quickly knead the dough.
  • Wrap it in plastic wrap, put in the refrigerator for 30 minutes.
  • Take out the dough, roll it out on cling film 0.5-0.8 cm thick (it turned out thicker for me, but tastier when the dough is thinner)
  • Transfer the dough to the mold (I baked in the village, I didn't want to heat the oven in the heat, so my pie was baked in a slow cooker), distribute the dough along the bottom and along the sides of the mold, making a plate of shortcrust pastry.
  • Filling:
  • Pour blueberries into a mold lined with dough and distribute evenly.
  • Beat whites until peaks, add sugar and beat again.
  • Mix cottage cheese with yolk, starch and vanilla (I also do this with a mixer).
  • Add protein mixture and mix.
  • Place on top of blueberries and smooth.
  • You can sprinkle it on top with grated remains of shortcrust pastry, if it was superfluous.
  • Bake over medium heat for about 35 minutes. I baked in a multicooker for 60 minutes.
  • And that's all, that I managed to take a picture in time! It was not possible to photograph the whole. The pie was already very fragrant. It's good that I managed to slow down the people before eating!

Note

Guys and girls, if you have sour cream at home, then do not regret adding 200 g to the cottage cheese, it will be even juicier. I didn’t have sour cream, but I had to follow it to a neighboring village far away.
