Ingredients

Gutted ducks 1 kg
Marinade:
Water 1 l
Vinegar 9% 2st. l.
Juniper berry 5 pieces.
Peppercorn mixture 1h l.
Bulb onions 1 PC.
Garlic 2 tooth.
Big apple 1 PC.
Bay leaf 2 pcs.
Salt taste
Sauce:
Flour 2st. l.
Bulb onions 1 PC.
Carrot 1 PC.
Cilantro and parsley stalks 1 bundle
Boiling water 1 st.
Salt taste
Ghee for frying

Cooking method

  • There are always two problems in game: the specific smell and hardness of the finished meat. They are solved, respectively, by soaking and long stewing. So,
  • Cut the gutted bird (I have several different types) into portions, soak in cold water for 1-3 hours. The water must be periodically drained and filled with new water, achieving transparency.
  • Marinade can be any. This time I used this one. Peel the onion and cut into 4 pieces. Remove the core from the apple, grate on a coarse grater, finely chop the garlic. Put all the ingredients in the water, bring to a boil, boil for 5-10 minutes, cover and leave to cool and infuse.
  • Pour the cooled marinade into a container, put the duck, close and leave for a day.
  • After a while, dry the duck with a towel from the marinade, fry on both sides in ghee until golden brown.
  • For the sauce, fry the flour in a dry frying pan, stirring until light brown.
  • Dice the onion, grate the carrots on a coarse grater, chop the stems of the kintsa and parsley. Fry all vegetables in oil until soft. Add flour, salt to taste, boiling water, beat with a blender until smooth.
  • Lay the sauce and pieces of poultry in layers in a saucepan. Bring to a boil, reduce heat and simmer until soft for 1 hour to 1.5 hours. Adding water if necessary.
  • I cooked in a Cuckoo 1054 pressure cooker, Multi-Cook 110C for 40 minutes.
  • The finished meat turned out to be very tender, without a specific smell. The sauce thickened and looked more like a side dish. With him sobssno and with vegetables, we ate.
