Buckwheat pancakes (gluten free)

Ingredients
skim kefir (or whey) 250 ml
egg 2 pcs
buckwheat flour 2 tbsp. l. (with a slide)
potato starch 2 tbsp. l. (with a slide)
sugar (or fructose) 1-1.5 tbsp. l.
salt 0.5 tsp
baking powder 1 tsp.
baking soda 0.5 tsp.
Cooking method

Beat eggs with salt and sugar.
Pour in kefir and mix well.
Add flour, stir.
Add starch, mix.
The dough is liquid, like liquid sour cream, because if the dough is thick, then the pancakes will be thick.
The amount of flour and starch should be 1: 1, and choose the density yourself.
Add baking powder and baking soda, beat.
I don't add butter to the dough. I use a cast iron pan. Before each new pancake, grease the pan with olive oil using a silicone brush.

Small addition. The fire should not be low, the pan should be well heated. Frying time for each side 30-40 sec. I will try to take a photo and arrange it more fully, but for now, like this.
