Ingredients

Wheat flour 400 g
Buckwheat flour 50 g
Oat flour 50 g
Water 350 ml
Salt 1 tsp
Sugar 1.5 tbsp. l.
Sunflower oil 2 tbsp. l.
Dry yeast 2.25 tsp
Panifarin 1 tsp

Cooking method

  • Instead of oatmeal, I chopped oatmeal.

  • Basic fast mode. I put it in size M, the crust is dark, the time is 2 hours. Although I should put L / but I put M. And the last time I did it without panifarin, I forgot to put it, I didn't understand the difference.

  • Now I want to try adding nuts and replacing sunflower oil with olive oil.

I bake such bread all the time. Really like.

I gradually increase the amount of buckwheat flour, now I add 150 grams. So far it turns out. I reduce wheat accordingly. This bread is the tastiest for me.

I baked this bread, but I'm not happy with the result! Probably it did not work out due to the fact that I decided to add another 50 grams of bran. The gingerbread man checked, when the dough was rising, then everything was also in perfect order. and when I took out the finished loaf, it was low and flat (((But it tasted like nothing, but I don't want to experiment anymore! I haven't added panifirin yet (if I wrote this tricky word correctly)

BEGiMOT, and what kind of special yeast is needed for the fast mode? As far as I know, the yeast is the same - only in the fast mode and in the normal mode, different amounts are put in.

I saw fast-acting ones in the store, though I didn't buy it, since I'm in no hurry)) I didn't like this bread, not only was it like a brick and tasted awful, I fed the pigeons today))) I won't experiment again !!! Today baked with corn flour. turned out to be beautiful. I don't know the taste yet)))

It seems to me that it is better to do it with ordinary yeast, otherwise there is a lot of yeast, and the time difference is not so huge to eat so much yeast. And there is no need to grind the oatmeal into flour, because during the kneading process they completely "dissolve" in the dough and make it looser. But this is my IMHO.

I constantly do not have enough time and I bake bread on a fast setting. Grind the oatmeal even in a coffee grinder for a few seconds. The bread is slightly lower than regular quick bread, but very tasty. And we also have very good flour, and panifarin is not needed.

BEGiMOT, and what yeast do you use? Maybe it's all about them? I always take the fast-acting PAF-moment. Do you strictly observe the weight and technology of the bookmark? I take a lot of recipes from here from the forum and it was not that something did not work out.

Nadezhda in her recipe WHEAT AND OAT BREAD on the rye program gives a recipe for oat bread with pastries on the rye program. Not everyone likes quick baking, as I and I propose to bake buckwheat-oat bread on the rye program, but reduce the yeast to 1.5 tsp.

I baked a ghleb on the main program, reduced the yeast to 1.25 tsp. The bread turned out superb. I think that it is not worse than in the fast mode. But I continue to use it for lack of time.
