Ingredients

lime, orange 1 pc
red onion 1 PC
green onion (feather) 35 g
orange juice 125 ml
lime juice 75 ml
chicken broth 125 ml
soy sauce light (mine is dark) 175 ml
sugar (I have brown) 200 g
water 250 ml
ginger root 1 tbsp. l
fresh cilantro (chopped) 1 tbsp. l

Cooking method

  • I didn't find partridges (there are no hunters in the family), but chickens were available!
  • According to the recipe, it was necessary to marinate the partridges in citrus marinade overnight. But first, free them from the spine and other bones. (And then I remembered the lesson on dismemberment from ShuMakher. Only I have never been a surgeon and did not even dare to try.)
  • First I prepared the marinade: I mixed onions, soy sauce, green onions, orange and lime juice, ginger, cilantro and broth in a large bowl.
  • It's good if you have a night in stock. I didn't, so my chickens were marinated for 3 hours.

  • Then I cooked candied peel from the peel of halves of lime and orange.
  • Finely cut strips from the peel, blanch them in water for 1 minute and drain the water. Then I dissolved sugar in water and boiled citrus strips in syrup until the water was completely boiled away.

  • Now is the time to take the partridges (chickens) out of the marinade. We place them in the oven on the grill, pouring marinade over them.
  • Fry on the middle shelf for 10-12 minutes on each side, pouring marinade over. So advises the author - J. Butler.
  • And I cooked my chickens in a pan. It took me quite a bit of time - 10-15 minutes on each side.

Make more candied fruits, just do not overdry and cut thinner. It was so delicious with candied fruits that I did not spoil this taste with either a side dish or a salad of tomatoes with cucumbers.
Now I realized that an orange or pineapple salad with something else would fit here (I still need to think).

The second year on our site has done its job - I can no longer serve a regular dinner to the table ... Let it be a little zest, but I'll stick it in!

I added the following stage on my own:
do not drain the syrup, but boil it together with the candied fruits in a saucepan, without bringing it to a complete boil - this is how the syrup remains, which together with the marinade will give a unique taste !!!
