cream 800 g

Cooking method

  • Dough:
  • Beat butter with 300 g of sugar + 10 yolks, beat well. Melt the chocolate with sour cream and mix well, add flour + cocoa + baking powder to the yolk mass, sift into our mixture. Mix everything well, beat the proteins into a stable foam, add sugar and beat until the sugar is completely dissolved, carefully combine the proteins with the mass, mix. The dough turns out like thick sour cream (!!!!!!! attention after proteins do not add flour !!!!) Divide into 7-9 parts (I got 7, the size of the baking sheet is 36 x 26 cm, the height of the cake is 11 cm)
  • Cream:
  • Melt the chocolate with butter and cream, cool and beat (my cream has stratified, but this did not affect the quality of the cake at all, since the cake does not require impregnation there)
