Cooking method

This is such a summer cottage option when you want something tasty, but there is nothing to invent this tasty from. Why Tigranin? According to the description in the book, it was supposedly a hit pie of someone's Armenian aunt Tigran Tigranovna.
  • 1. Beat eggs well with butter and sugar, add sour cream, then flour in portions until a soft and pliable dough. Something like this:

  • 2. Now divide it into parts in a ratio of 3/4 and 1/4. The quarter will be used for decoration with stripes.
  • 3. Take a wide form (you can use a small baking sheet), roll out the dough so that the sides remain. It doesn't have to be thick. But do not bother too thick))). A centimeter is normal.
  • 4. By starch. In the recipe, they are invited to sprinkle berries on top. Together with sugar. The first time I did it. Now I never do that.))) This is creepy crap. Starch is poorly wetted. Therefore, it should be mixed with any liquid you like before baking. Otherwise, you will have a baked cake, beautifully sprinkled with starch on top.))) Now I take a little juice of berries, any syrup (mostly maple). It needs very little to moisten the starch, almost a couple of teaspoons (so as not to add excess moisture to the cake), but in this case you will be sure that the starch will thicken and will not powder from the finished cake. So - knead the starch with the liquid and gently mix with the filling.
  • 5. Lay out the berries. Berries can be used frozen, but then defrost them and drain off excess juice. For example, I practically do not defrost cranberries, only before preparing the dough I take out and pour it into a cup. It is small, quickly and well warmed up in the oven. You can use thick jam / jam. You can mix the ingredients. In this particular pie, I disposed of the leftover cranberries (about a glass) and half a glass of homemade apricot jam. How much of your mixture of different berries requires sugar - you have to figure it out for yourself to your liking. Just berries - 5 tbsp indicated in the recipe. l. Sahara. But mixtures of berries and jam or just jam are clearly less. Cranberries - obviously more, etc. I specifically in my mixture for this cake added 3 tbsp. l. brown and about a tablespoon of maple syrup for starch.
  • 6. Bend the small dough sides to the center. Roll out the remaining quarter of the dough, cut it into strips with a curly roller knife and make a grate on the pie.
