Ingredients

Carrot 1 small
Garlic 1 head
Tomato paste 1 tbsp
Fresh basil, cilantro, parsley Multiple stems
Ground paprika (sweet) 1 tbsp
Salt Taste
Seasoning Chubritsa (thyme)
Vegetable oil for frying
Water 2.5 l
Lemon for decoration

Cooking method

  • Put smoked meats in an additional bowl of the pressure cooker (not included in the kit), add water, close the lid and select the soup / stewing program. Set the time - 15 minutes and press start. At this time, chop the onions and carrots (I chopped on the Berner), fry until golden brown in a skillet, add the tomato paste. By this time, the pressure cooker program will end. Release pressure carefully and open cover. Pour lentils into broth. I didn’t soak lentils and I had a brown Bulgarian lentil that doesn’t boil very much. This soup doesn't have to be puree. Also add onion, carrot and tomato paste to the broth. Add thyme and paprika. Close the lid again and select the soup / braising program. Set the time to 18 minutes and press start. At this time, peel the garlic and chop the herbs. When the pressure cooker program is over, carefully release the pressure and open the lid. Add herbs and garlic, salt to taste. Close the lid and wait 5 minutes without turning on the pressure cooker.
  • Pour into a bowl and garnish with lemon and cilantro.

Note

In Bulgaria, this soup is made with lamb in winter and without meat in summer. I decided to try it with smoked meats.
