Slow Cooker Stuffed Eggplant

Ingredients

Eggplant 3-4 pcs.
Tomatoes 3 pcs.
Minced meat (beef, lamb, goat meat) 0.3 kg
Onion 2 pcs.
Greens (parsley, cilantro, basil)
Potatoes for garnish 1 -1.5 kg.

Cooking method

Prepare minced meat. Salt and pepper the minced meat, mix it with finely chopped tomatoes, onions and herbs.
Make boats from eggplant. Cut them in half and scrape out the middle. Stuff the boats with minced meat and spread mayonnaise on top.
