Anael, baked milk is obtained by keeping milk for several hours at a temperature close to boiling. Then the milk acquires a creamy color and a characteristic slightly nutty (and to me caramel) taste. Also, the famous Guryev porridge was prepared with this milk.

If you cook milk without equipment such as multi-, slow- and other cooks, then there are two cooking options:
1. In a large, thick-walled enamel saucepan, boil the milk (being careful not to burn) the milk over very low heat until the milk becomes creamy.
2. In a thick enamel or ceramic dish, roast milk in the oven for about two hours, regularly melting the formed foam.

Children can be given such milk, I cook semolina, oatmeal and fermented baked milk using purchased ghee.

I added this yoghurt sour cream to baked milk, wrapped it up, put it in a warm place (in a room). Carefully tearing the foam into pieces according to the number of containers, put a little in each container, the foam easily lay down without drowning.

I used to make baked milk many times in the oven, in an aluminum pan. The temperature is somewhere between 150-160 degrees. The most important thing is not to heat the foam in any way, otherwise the cooking time increases by 3 times (I tried it, I know), and it’s perfectly heated in 2 hours. The froth will be a dome over the milk, a rich brown color. Yes, and also, I took pasteurized milk, not sterilized.
