  • I laid everything as it is - flour, butter, diced straight from the refrigerator, eggs, 3/4 cup sugar, the other 3/4 go to the filling). While it was stirring, I made the filling - chop the walnuts (I put them in a bag for sandwiches and wrap them in a towel so that if they scatter, it’s not far away) and grind the nuts with a hammer to beat the meat. Grind into large pieces, not into dust, 5-7 mm in size, so that they can be felt in baking. Defrost the cranberries (if frozen), you can grind it with sugar in a blender, but I like a different consistency more - I press the berries a little with a pusher so that the juice starts to come out a little, then mix with sugar and crushed nuts.
  • We separate a piece of half a fist or a little more from the finished dough, put it in a plastic bag and send it to the freezer, it must be thoroughly cooled, or even better, freeze it, for at least 15 minutes. If there is no time, you can not do it, but then it will be very difficult to rub it on a grater.
  • So, in the mold (I often use a detachable one, or you can make a lot of small, portioned pies in a cupcake mold) we spread the dough, make the sides, pour our filling into (it should not be flush with the sides, leave at least 3-5 mm heights) then grate a piece of dough from the freezer directly onto the filling. We put in an oven preheated to 180 ° for 20-25 minutes, make sure that the dough is not brown, but a pleasant golden color. We take it out of the oven, let it cool, remove it from the mold.
