Pumpkin soup with sorrel

Ingredients

pumpkin pulp 400 g
sorrel large bundle
carrot 1 medium
bulb onions 1 average
celery 1 large stem
radish greens 1 bundle
young nettle leaves handful
bell pepper 1-2 pcs. depending on size
potatoes 1-2 pcs.
chicken broth (any is possible) 1 l
parsley, dill, green onions large bundle
For croutons:
white or black bread
Gouda cheese
sour cream and fresh herbs for serving
fresh ginger (optional) 2 cm

Cooking method

  • Cut onions and ginger into small cubes. Fry until golden brown. Add carrots grated on a coarse grater. As soon as the carrots change color, add pumpkin pulp, celery and bell peppers, cut into small cubes, into the pan. While we are stewing vegetables, put a pot of broth on the fire and put diced potatoes there. Season with salt and pepper (preferably freshly ground with a mill). The vegetables are stewed for about five minutes, then we transfer them to a common pan. Cook until the potatoes are tender. Then put finely chopped sorrel in a saucepan, after three minutes - finely chopped greens. Let it boil a little (2-3 minutes), turn it off, blender, serve with croutons and cheese. (I toast the bread in the toaster, sprinkle with grated cheese - and microwave for a few minutes, then cut into small pieces).
  • When serving, put a teaspoon of sour cream in a plate and sprinkle with fresh herbs.
  • The sweetness of the pumpkin in this recipe is balanced with the sourness of the sorrel. It turns out very exquisitely! We really enjoyed!
  • PS You can also put a tomato in this soup, but now is not the season, the tomatoes are tasteless, so I did without it ...
  • The French serve this soup in small pumpkins, using a pumpkin shell instead of bowls. And the pulp from these pumpkins goes directly to the soup. But with small pumpkins I have a lot of stress even in the season. For my mother-in-law grows a pumpkin the size of a cow's head ...
