Ingredients

Fresh medlar 1 kg.
White sugar 300-500 grams
The water is clean 250-300 ml.

Cooking method

  • Peel the fruit, cut and remove the seeds.
  • Cut the fruit into pieces of any size if you need to make jam.
  • If for jam, then you can leave the fruit in halves.
  • Medlar tastes like sweet and sour plum, the skin is hard, the flesh is very soft.
  • Boil the syrup from water and sugar. Dissolve sugar in water, let it boil for 1-2 minutes. Then put the fruit in the syrup and cook first over high heat for 15-20 minutes, then reduce the heat and bring the jam to readiness. Stir the jam periodically.

Medlar
By its chemical composition, the fruits of the medlar are close to apples. They contain up to 6.7% malic acid, 10-19% sugars, citric acid, vitamin C, tannins and aromatic substances, pectin, phytoncides, etc. The leaves contain many tannins.

Medlar is eaten fresh, in areas where it grows, they make jam, jams, marshmallows, marmalade, jam, compotes, juice, and from seeds - a substitute for coffee.

Japanese medlar, lokva - fruits of the eponymous evergreen tree or shrub up to 6 m high with leathery lanceolate leaves and fragrant small white flowers in the apical paniculate inflorescences. They have an apple-shaped, pear-shaped, pale yellow or golden color, oblong brown hard seeds, easily separating from the pulp - yellow, juicy, mildly sweet and sour taste and pleasant aroma.

The homeland of medlar is Japan, China. In the former USSR, it grows on the Black Sea coast of Georgia, in the Krasnodar Territory, Azerbaijan, and Crimea.

Medlar contains up to 14% sugars, 10 mg% vitamin C, 1.5% pectin substances. It is used fresh and for the preparation of compote, juice, preserves, marmalade, jam, marshmallows. A coffee substitute is prepared from the seeds.

Turkish medlar is sooooo different.Literally every tree has its own taste. For me, the most delicious is the one sold by local villagers. It is usually quite small with a very thin skin (therefore it cannot be stored and requires gentle handling), with delicate flesh and very juicy.
The medlar, which is offered in hotels and exported, is completely different. It is large, with rough skin and pulp, and not too juicy. But it can be stored and transported. I don’t buy such a medlar, mine don’t eat it.
