Note

There are several versions of the origin of this dish:
In an interview with The New Yorker magazine in 1942, broker Lemuel Benedict claimed to have wandered into the Waldorf Hotel in 1894, hoping to find a cure for his morning hangover and ordered "toast with butter, boiled eggs, bacon and Hollandaise sauce." Oskar Tshirke, the restaurant's head waiter, was so impressed with the dish that he offered it for breakfast and lunch, replacing the ham toast with an English bacon bun.
According to another version, eggs Benedict was invented by the chef of Delmonico's restaurant in New York for Mr. and Mrs. Benedict, his frequent visitors. One day, Mr. Benedict said to the head waiter: "Could you suggest us something new?" And got boiled eggs on toast with a thin slice of ham, hollandaise sauce and truffles on top.
Despite the difference of opinion, eggs Benedict began to be cooked in the best restaurants in Paris from poached eggs and Dutch sauce, which cannot but call them - traditionally French.

Great recipe! What is hollandaise sauce?
MariV
Hollandaise sauce

"In a small container, mix lemon juice and balsamic vinegar. Separate the whites from the yolks and beat thoroughly, gradually pouring the yolks into the resulting mixture, beat again. Heat over the fire. Slowly add the melted butter to the yolks, lemon juice and vinegar. Beat the whites and stir them into the sauce and heat over the fire until the required thickness.
Above is the recipe for Airy Hollandaise Sauce. There are no proteins in the classic Hollandaise sauce, but unlike the classic one, this version of the sauce can be prepared in advance and heated before serving, without fear of curdling, in addition, proteins give airiness and make it less nutritious. "
If desired, you can replace it with mayonnaise.

That is, the collective farm's breakfast! So you can call it yes?

Yes, my, you are pretty, a peasant woman, but not a collective farmer!
CheBuRashGO
a peasant woman, but not a collective farmer!
Here!
That is why all this bitter cataclysm that we are witnessing here (c) Violinist
And tied to the categorical reluctance of the urban intelligentsia
To accept and understand plump collective farmers into the camp of peasants and, of course, a complete refusal to perceive them as Peizanok!
And this completely destroyed the country in the dark years gone by!
After all, if they were called Peyzanks, what kind of collective farmer would go to the market economy? A?
But the Tiligentsia rejected them! She pushed aside and harshly divided the collective farmers and peasant women!
The whole mystery, the whole devil is in the details!
In the pioneer camp, the cook Ashot cooked the same yaztsi for us, but he called them not Poached, but "boiled egg" (as they wrote on the wall in the menu with a pen)
Would you know it was Poached? On top of the grilled sausage? (burst into tears remembering the happy breakfast at the pioneer camp) :-)

MariV
Gosha! : girl_haha: what are you, the son of politburo members, what did you eat for breakfast in the camp poached eggs with truffles? but pretended to be a felt boot ...
CheBuRashGO
No truffles!
Truffles in my childhood were such sweets!
MariV
And that's right, mushrooms are tastier! They can also be eaten raw, yes.
And in my deep childhood, a sandwich with scrambled eggs was a sign of well, quite mournful!
CheBuRashGO
a sandwich with scrambled eggs was a very mournful sign!
Yes, it was severe poverty. No doubt
And smoked sausage was always stone-hard!
The present ones will not understand. Now I buy raw smoked sausage and it's fresh! No words!

It's easier for me, I'm just that same peasant! Or what is it? Paze ... (even inconvenient to pronounce)! We have some eggs from our chicken
MariV
Loya, this is great! The fresher the eggs, the better the poached will be! I had eggs from a neighbor's chicken.
Loya
For me, this is very interesting and new information. I mean, poached eggs need fresh eggs. Very relevant and timely! And I will definitely prepare the Dutch sauce! Once again, ATP for the recipe!

Yes, if the eggs are not that, well, like the second freshness, then the protein will be torn.
