Ingredients

Wheat flour 430 g
Flax seeds (ground in a coffee grinder) 20 g
Water 250 ml
Salt 1 tsp
Sugar 1 tbsp. l.
Linseed oil 2 tbsp. l.
Dry yeast 1 tsp
Powdered milk 1.5 tbsp. l.

Cooking method

  • Weight - 750 g, mode - basic, crust - medium.
  • Once I added 1 tbsp to the batch. l. kefir sourdough - the bread rose even better, but got a sour taste.

The recipe has already been tried several times.
The bread rises well, the crumb interspersed with ground flax (like with bran), the taste is unusual - you need to try it. Everyone knows the usefulness of flax for the human body. This bread contains: polyunsaturated fatty acids (omega-3 and omega-6), complete vegetable protein, vitamins B1, B2, B6, E, folic acid, dietary fiber, antioxidants.

I read that the addition of flaxseed flour does not allow the bread to stale for a long time.
So, I specially left a piece in the bag. The bread really does not stale for a long time, and even now, after 10 days, there is no staleness and mold, but the smell of stale bread began to appear.

The dough went well, only before baking the cap fell off, of course this did not affect the taste. I have baked bread according to your recipe for the second time, the family is delighted! Made my own small changes, maybe someone will come in handy:

1.5 tsp. yeast
400g wheat flour
25 g of flaxseed flour (with wheat germ flour "Vitazar - bought in the supermarket in the diet food section")
25 g wheat bran
1.5 tbsp. l. milk powder
1 tsp salt
1 tbsp. l. Sahara
2 tbsp. l. olive oil (did not find flaxseed)
280 ml of water (I came to this amount empirically)
The first time I tried it on the main mode, the bread turned out to be lopsided, the second time - on the dietary one, and everything turned out as I wanted. Color - gray-cream with small inclusions, small pores, very tasty, slightly sweetish. Added sunflower seeds, go well. Now I'll go and try to put it with sesame seeds.

I bake flaxseed bread using flaxseed flour. But never did I get a tall loaf. With the same ratio, for example, of wheat and chickpea flour, the loaf is almost 2 times higher.

In the process of kneading, I can add 1 table. a spoonful of wheat flour and 1 table. a spoonful of water.
The taste is excellent, the color of the bread is brown, the roof is not collapsed, although the bun is a little sticky.
My question is this. Why is the loaf low? Is there little yeast or is linseed flour so heavy?

I don’t even know what to say to Pek linseed bread long ago. Never had a problem. The recipe is the same, except for the amount of wheat flour, I put 400 grams of water, 250 ml of water, sometimes I add drop by drop, depending on the bun. Sometimes I use fresh yeast (12 g), sometimes dry (6-7 g). I bake in the oven. Always fits well. I grease the top with an egg, but this is because in my oven there is no crust if nothing is greased.
