Ingredients

mature leaven 15 g
whole grain flour 75 g
water 75 g
DOUGH
mature dough 150 g
whole grain flour 175 g
wheat flour 1 grade 250 g
fast acting yeast pinch
salt 9 g
water 270-350 g

Cooking method

  • We prepare the dough on mature wheat (I have whole grain) sourdough and keep it for 10-12 hours. Next, put all the ingredients for the dough into the bread maker's bucket. The amount of water depends on the moisture content of your flour. It took me 270 g. We turn on the "main" or "wholemeal bread" program. We are waiting and enjoying delicious, healthy bread.
