Beetroot caviar with dried mushrooms

Ingredients

Beet 600 -700g
Medium onion 4 things
Dried porcini mushrooms 40-50 g
vegetable oil
salt
vinegar
pepper
sugar
tomato paste or tomato juice optional

Cooking method

  • Cook the beets in a micron. Leave to cool.
  • Put the mushrooms in a glass bowl, add water and put in the microwave for 6-7 minutes, at full power. Then rinse the mushrooms well, do not pour out the mushroom broth. Cut the onion into cubes and fry until transparent in vegetable oil. While the onion is fried, finely chop the mushrooms and put them in a pan or stewpan with onions, let salt simmer over low heat for five minutes. Peel and grate the cooled beets, put in the onion-vegetable mixture. Pour about a glass of mushroom broth there, salt to taste, cover and leave on low heat for another 10-15 minutes, stirring occasionally. Add all spices to taste. Pour vinegar in teaspoons. I have balsamic Modena, it took me 3 teaspoons, the usual table is much less.
  • You don't have to use the microwave, but boil vegetables and mushrooms in the usual way. With micro, it just turns out faster. I put the beets in a plastic bag and pierce it with a toothpick. I put potatoes on baking twice, in total it turns out 16 minutes.
