Eggplant salad

Ingredients

Eggplant 4 kg
Tomato juice
(Scroll the tomatoes in a meat grinder
or grind in a way convenient for you)
3 l
Sweet pepper
(medium size)
5 pieces.
Bitter pepper 2 pcs.
Peeled garlic 0.5 tbsp.
Sugar 1 tbsp.
Vinegar 1 tbsp.
Salt 2 tbsp. l.
Grows. oil 1 tbsp.

Cooking method

  • 1. Prepare tomato juice - chop the tomato (I chop it with skin and seeds)
  • 2. Peel the eggplants, cut into cubes about 2x2 cm.
  • 3. Pepper to remove seeds and chop (I do everything in a meat grinder)
  • 4. Boil the volume. juice, add eggplant, pepper, oil, salt and sugar. Boil, stirring occasionally, over low heat for 15 minutes.
  • 5. Add vinegar and cook for another 5 minutes.
  • Roll up in sterilized jars. The output I get is about 7 pieces. liter cans

But I do not agree, if you fry the eggplants immediately after cutting, then they really absorb like a sponge. And if you cut them, add salt, then squeeze the juice, then very little oil will be needed.
By the way, in my version, only 0.5 tbsp. butter and I fry them lightly in this amount, and then put them in boiling adjika for only 3-5 minutes. I also did boiled ones like rinishek, and then I tried to lightly fry the taste, I liked it more. And you can pour much less vinegar. Well, this is my version and my opinion, and everyone cooks as they are used to or as they like.

My version of this recipe
For 3.5 kg eggplant (after cleaning, 3 kg will remain),
3kg tomato,
0.5 kg of red bell pepper,
0.5 tbsp garlic cloves
2 hot peppers
0.5 tbsp. oils,
0.5 tbsp. Sahara,
0.5 tbsp. 9% vinegar
2 tbsp. l. salt.
In general, the composition is the same as that of rinishek, but there is less sugar.
Peel the eggplants and cut them lengthwise into 4-6 pieces, and then hit them to make "fingers". Salt the eggplants and leave in a bowl for 30-40 minutes. Squeeze out the juice, you can rinse with water to remove salt.
Then lightly fry the eggplants in oil.
Make tomato juice from the tomato, add the Bulgarian pepper rolled through a meat grinder (chopped with a blender) and let it boil for 10-15 minutes. Add salt and sugar. Then put the fried eggplant, chopped garlic, hot pepper, vinegar.
Let everything boil for another 5-10 minutes.
If you have a favorite delicious seasoning you can add. I add 1h.l hops-suneli, but not store-bought, but aromatic bazaar.
Arrange in sterile jars and close. Wrap with a blanket until it cools.

Bitter pepper for a meat grinder, only one large pod is enough for me. The garbage is also for a meat grinder, but I twist it in a separate plate, because I add it at the end. I have already closed such eggplants.
I added more dill and cilantro at the end.

Agree with rinishek, something will be lost. I have this recipe listed as "Eggplant in adjika", but it will turn out in not very adjika. Exactly "five" by analogy with "ten".
