white cabbage 800 g - 1 kg

cinnamon 1/4 tsp
anise, ground cloves by a pinch
red currant jelly 1 tbsp. l
Brown sugar 30 g
madeira (I have homemade wine) 200 ml
starch 1 tbsp. l

Cooking method

  • I have been going to lay out this recipe for a long time, but it turned out only today. Found it in the magazine "Vkusno" # 12 for 2012.
  • 1. First, prepare the breasts.
  • Heat the oven to 100 * C. Wash the breasts, blot dry, cut the skin obliquely at intervals of 1-2 cm and fry without oil in a hot frying pan - first skin down for 4-5 minutes, then turn over and fry for another 1-2 minutes. Season with salt and pepper.
  • Next, place the breasts on a baking sheet lined with baking paper. We bake for 20-30 minutes.

  • 2. Cut the onions into small cubes and the shallots into quarters. Throw the cherries in a colander, collect the juice.
  • Now let's cook the cabbage.

  • 3. Heat the fat left over from roasting the duck in a saucepan. Sprinkle onions on it, add cabbage and bay leaf. Add cloves, cinnamon and anise, then jelly and simmer for 20-25 minutes, stirring occasionally.
  • Season with salt and pepper to taste, sugar can be added.

  • Now let's prepare the sauce.
  • Add the shallots with the remaining duck fat, sprinkle with brown sugar and lightly caramelize.
  • Add Madeira, cherry juice and 100 ml of water - boil and simmer for 15 minutes.
  • Stir the starch in 2 tablespoons of water. Add it to the sauce and heat for 1 minute. Add the cherries and heat for another 1 minute. Season with salt and pepper.
