Ingredients

flour (I have 1 grade) 400-450g
eggs 3 pcs
sugar 0.5 stack
sour cream 150g
draining. oil 230-250g
dried apricots, raisins 150g each
nuts (I have walnuts) 1 incomplete stack
vanilla, cardamom
baking powder 1 sachet 20g
sugar + cinnamon (for sprinkling) 2 sec. l. + 1 tsp

Cooking method

  • This recipe "lives" with me for 20 years, my mother-in-law was Jewish and a lot of interesting things remained in my memory from her.
  • I must say right away that this roll is for lovers of not sugary and fatty, but crumbly and uncomplicated pastries.
  • So, let's begin.
  • Everything you need has been prepared (this is almost always in the refrigerator):
  • Roll Jewish sand
  • separately set aside the necessary for sprinkling (sugar with cinnamon) and grind cardamom (I take grains from about 5-6 pods)

  • Grind eggs with sugar, and add crushed cardamom and vanilla

  • We spread sour cream and a little softened butter

  • Shake until smooth, at the same time sugar will dissolve

  • Pour in the flour, pre-mixed with the ripper and knead the soft dough.
  • ATTENTION!
  • Shortcrust pastry does not like "mash" as for dumplings, otherwise it will be a clogged crust. I give a minimum guideline for flour, it may need to be added, but do not get carried away, the dough should stick to your hands, be sooo soft.
  • Therefore, I put my fingers in a "mixer" and, as it were, mix it literally in 5-7 steps, - as soon as I grabbed the flour and took shape, I set it aside, crushing it with flour for 20-30 minutes in the cold.

  • Then I divide into 2 parts (we will have 2 rolls)

  • and I roll each one in turn on a table dusted with flour into a rectangle.
  • Then sprinkle it with cinnamon mixed with sugar, broken nuts, prepared raisins, chopped dried apricots (do not forget to divide the whole filling into 2 rolls).

  • Then we roll it up very easily, without pressing down the dough, but as if throwing the wrapped part over the filling

  • We put it on paper, or on a greased baking sheet without it (I ran out of it, I had to reuse it after bread). We transfer it very carefully to the sheet, I have already got used to it, but sometimes there were punctures, since the dough is very soft. I slip my palm lengthwise under it, throw it over my entire arm, and rather onto a sheet.
  • Above, do not apply! This is my filling bristling, and so, no pressing.
  • Roll Jewish sand
  • We heat the oven to 180 without convection and set it for 25 minutes (sometimes at the end I can turn on the convection for the blush for the last 5 minutes. Do not wait until it starts to darken, dry it.
  • Actually, at this temperature, the time is perfectly verified. And this is what happens (sometimes I smeared it with an egg on top, but then I didn't like the caked film, in my opinion it goes more for yeast baked goods, so I haven't greased anything on top for a long time, I even like these cracks:

I really want you to succeed. Shortcrust pastry is generally the easiest thing to work with.
The main thing that it does not like is excess flour and diligent kneading.
Therefore, this recipe is available even for beginners. And if you manage to follow all the recommendations for working with it, the result is worth it.
