Mixed sorrel soup

Ingredients

Beef with bone 500 g
Ham 100 g
Sorrel 200 g
Bulb onions 60 g
Carrot 60 g
Parsley root 1 PC.
Dried mushrooms 3-4 pcs.
Eggs 4 things.
Sour cream 100 g
Vinegar
Pepper
Bay leaf
Salt

Cooking method

  • Boil broth from meat, ham, onions, roots and pre-soaked mushrooms, strain. Rinse young sorrel leaves, cut, put in a boiling strained broth, boil for 10 minutes, add boiled meat products and mushrooms, season with sour cream and 2 egg yolks.
  • Boil the water separately with salt, vinegar, pepper and bay leaves. In the boiling marinade, gently break and lower 2 eggs without shells. When the whites are curdled, remove the eggs, place them one at a time in bowls and pour over the sorrel soup.
  • You can also put hard-boiled eggs in the soup - half on each plate.

  • Today I cooked a soup with frozen sorrel and remembered the summer, because it smells of all herbs: dill, parsley, parsnip; and yolk, like the sun, and sour cream, snow-white clouds. Delicious!

My husband was at the dacha today, says that fresh sorrel can be collected for soup right now! We have a bed for a hundred years in one place, it sows itself twice a year (I only help the seeds to be evenly distributed over the bed !!!) And a little the temperature is "suitable" - our sorrel begins to grow! ..

His leaf is large, but sooo delicate and thin, light green !!! The husband says that 3-5 cm leaves!
