Ingredients

Biscuit:
chicken eggs 4 things
granulated sugar 100 g
wheat flour 100 g
starch (any) 20 g
Coating:
egg white 1 PC
coconut 60 g
granulated sugar 50 g
Impregnation:

cream 15-20% 200 ml
coconut milk 200 g
granulated sugar 50 g
Option 2:
cream 20% 400 ml
granulated sugar 50 g
Option 3:
milk 200 ml
condensed milk with sugar 250 g

Cooking method

  • Biscuit:
  • Separate the whites from the yolks.
  • Beat the yolks with 75 g sugar in a light foam.
  • Whisk the whites into a stable foam, add the remaining sugar and beat again until a glossy shine and stable peaks.
  • In two or three passes, carefully combine the whites and yolks.
  • Mix flour with starch and sift into egg mass, mix gently.
  • Grease a baking dish with butter, lay out the dough. Bake in an oven preheated to 200C (convection 180C) for 20-25 minutes. The toothpick comes out dry from the finished biscuit.
  • While the biscuit is baking, prepare the impregnation and coating.
  • Impregnation:
  • The first option is to warm up the cream along with sugar to dissolve the sugar, add coconut milk.
  • The second option is to warm up the cream and dissolve the granulated sugar in it.
  • The third option: mix warm milk and condensed milk.
  • Coating:
  • Whisk the whites into a foam, add granulated sugar and beat until firm peaks. Add finely grated coconut and mix.
  • On the finished hot cake (right in the mold), make many punctures with a match or a toothpick and fill with impregnation. Top with a protein-coconut coating and place the pie in the oven under the grill for a few minutes.
  • Leave the finished cake in the form until it cools completely.

I found the recipe from Irina Chadeeva: 🔗 , part of the flour (20 g) in the dough was replaced with starch, so the biscuit is even softer.
I prepared a cake with different impregnation options, if desired, you can add 1-2 tbsp. l rum or liquor.
