Today I bought panifarin. I wanted to take a kilogram - for a test, the technologist said that 200 gr. it will last for a very long time since its consumption is 0.3% - 2% of the total mass of flour, depending on the amount of rye flour.

Therefore, I wanted to ask - 5 coffee spoons per loaf - is that a little? Or do you have another panifarin and its dosage should be different?
I just want delicious black bread and not overdo it with panifarin.

In white bread, 1 tsp is enough, and the recommendations of "House-bread" for rye bread 5 tsp. fine. I tried smaller, a little denser bread. The taste does not deteriorate, like homemade ones. If you add a teaspoon of malt, it will be darker, and definitely a different taste.
