Chocolate buns with drunk cherry

Ingredients

flour 350-370 g
fresh yeast 8 g
milk 200 ml
dark chocolate (72%) 70 g
butter 20 g
sugar 2 h l
egg 1 PC
dried cherries 50 g
cognac 50 ml
walnuts 30 g
Brown sugar 2 tbsp
powdered sugar 1 tbsp

Cooking method

  • 1. Pour the dried cherries with cognac and leave to marinate overnight.
  • 2. Grind yeast with sugar. Chop the chocolate, put in a saucepan, add 50-70 ml of milk, put on medium heat and melt. Add the rest of the milk, beat in the egg and whisk until smooth.
  • 3. Squeeze the cherries well, and pour the remaining cognac (1-1.5 tbsp) into the milk-chocolate mixture.
  • 4. Cut well-chilled butter into small pieces and rub into flour by hand until finely crumbled. Add yeast, pour in the milk-chocolate mixture (it should be at room temperature) and knead the dough. Knead for 2 minutes on medium speed, 5 minutes on high. Add cherries to the dough and knead on medium speed for another 2-3 minutes. The dough is sticky and runny. Leave the dough to rise for 45 minutes.
  • 5. Place the dough on a flour-dusted cutting mat. Divide the dough into 80-100g pieces and shape into buns. Leave for proofing for an hour (or until it doubles in volume). Before baking, grease the buns with milk and sprinkle with nuts mixed with brown sugar.
  • 6. Bake in an oven preheated to 220c for the first five minutes, then lower the temperature to 180c and bake for another twenty minutes. Cool buns on a wire rack and sprinkle with icing sugar.

Note

The buns are incredibly airy, very tender and fragrant. Especially lukewarm.

Marish, in buns, the main taste is chocolate. They are soft and lush precisely due to the use of chocolate, not cocoa, and for the same reason they are much more aromatic. The only thing is that they are not too sweet, but sugar can be increased if desired.
And further. These buns are delicious with milk.

Rusya, I did only with jerky or cocktail. I'm afraid that frozen cherries will give a lot of excess moisture, and the dough is sticky and runny without it. But if you try, then I would completely defrost, squeeze the juice as much as possible and not soak it. And cognac would simply be added to the milk-chocolate mixture.
