Ingredients

Cooking method

  • Rinse peas, soak in cold water. Leave for 3-5 hours, you can even longer. True, sometimes I do without soaking, I just rinse very well until the foam passes. Put the peas in a saucepan, pour cold water in a ratio of 1: 4. Cook until the peas are tender. About 20 minutes before the end of cooking, add potatoes 3: 1 (three parts of peas, one part of potatoes), or you can cook separately. Salt just before the end of cooking. You can crush mashed potatoes by hand, or you can use a blender.
  • If the pea broth does not evaporate, you can open the lid, slightly increase the heat and, under supervision, stirring occasionally, cook the puree until the water has completely evaporated. If I see that the peas and potatoes are ready, I can speed up the process and simply drain off the excess liquid.
  • While the peas are boiling, I fry the bacon and onions.

Note

Pea mash with potatoes is much softer and more tender than regular pea mash.

We love mashed potatoes (and with fried onions too), bacon (and with fried onions too) and mashed peas (and with fried onions too !!!).

We eat both bacon and mashed potatoes - as side dishes, as independent dishes and as "spreads" on sandwiches.

We don't make mashed potatoes especially for sandwiches, only if there is "excess" left.

And pea puree - yes, yes, yes! We prepare this "spread" all year round, and not only on fast days.

We cook pea pate (as it was called in the magazine "Rabotnitsa") from 1 glass of peas (shelled or unshelled).
Soak peas in 2 tbsp. water for 40-60 minutes.
Cook in the same water over low heat, adding 1 tsp. sugar - then it will cook faster and the taste will be better. You may have to add hot water during cooking (preferably boiling water). Because peas are boiled in different ways.

Be sure to stir - from time to time. So that it does not stick to the bottom of the pan. Especially - at the beginning of cooking, at the time of boiling and at the end of cooking. When there is very little liquid. Phew! It turns out that practically - constantly stirring.

While the peas are cooking, fry 1 medium onion (or larger - for an amateur) in 2 tbsp. l. vegetable oil (IMHO, tastier - on a simple sunflower, unrefined, store. "Own", home or market vegetable oil only - for an amateur, it is very "vigorous").

When the onion turns golden ("do not overcook! It will taste bitter" (c) - as the recipe says), mix it with the ready-made peas.

Season with salt (about 1 teaspoon salt) and pepper with black pepper (if desired). We pepper with freshly ground black pepper. Strong! Probably 1/2 tsp. I'll have to measure it.

And put it to cool (covered with a lid - otherwise it will "wind up"). When it cools down - pass through a meat grinder.

"Sandwiches with such a pate are very tasty" (c) ("Rabotnitsa" magazine). Really! Delicious!
You can simply spread it on black bread, or on white. You can pre-grease the bread with butter.

We even make such a paste on the guest table. And the most interesting thing is that none of our friends and acquaintances knew about such a "spread". So our family has been promoting this recipe for 40 years already. Success!
And my Estonian friend prepares pea-potato porridge - she boils peas in water (2 tbsp.), Cooks with fried bacon (150g), potatoes (4-6 pcs.), At the end of cooking, salt, pour in milk or cream (1/4 tbsp.) 1 / 2st.). Bring to a boil. He crumples with a crush and calls this puree - porridge.

Fold pancakes with filling in an envelope. Or we make it even easier - put the filling on a half of a pancake with a generous hand, distribute it evenly. Cover with the other half and fold this "structure" in half. It turns out a pancake "corner".

Lightly fry and heat in a skillet. Serve with butter, sour cream (you can add a little garlic to it), bell pepper salad. We bake it in the oven, remove the skin from it, cut it into thin strips and marinate in wine vinegar, add garlic and parsley. It turns out, too, delicious and satisfying.

In my plans, I also have a lean biscuit with such a filling to bake. I will only make the dough from rye and wheat flour (1: 1). Or make portioned "biscuits" out of such a dough, in the manner of "wickets", right? You can also use yeast pies ...
