  • Here's a recipe for a chicken breast named after her.
  • 1. Lightly beat the chicken breasts, salt and pepper.
  • 2. Dip the breasts in flour, then dip in an egg and breaded in almonds, pressing lightly on the nut pieces to keep them from crumbling. Adding from myself: pre-marinated the breasts in grated ginger and 1 teaspoon of orange peel.

The Marquise de Pompadour (1721-1764) is the legendary favorite of the French king Louis XV. For more than 20 years, Pompadour was next to the king, of which 5 years she was the lady of his heart, and the other 15 years she was his best friend and advisor.
In order to keep the fickle king and not lose the status of a favorite, the marquise tried in every possible way to surprise Louis and bring variety to his life. She entertained the king with music and theatrical performances, in which she herself took part. She invited the whole world of the intellectual and artistic elite to dinner parties. The most sophisticated society entertained the king, revealing more and more new facets of life to him.
As often happens with men, the way to Louis' heart was in no small measure through the stomach.
Aware of the king's good attitude to gourmet food, the Marquise constantly came up with new dishes, paying special attention to those products that support the fervor of love. She especially respected sauces, believing that they give dishes a unique taste.
History has preserved many dishes invented by the Marquis or named after her - these are the famous pheasant croquettes, lamb tournedos with perigue sauce and, of course, chicken breast à la Pompadour.
