Ingredients

Blackcurrant liqueur (Creme de Cassis) 10 ml
Champagne (brut, extra brut) 90 ml

Cooking method

  • First, blackcurrant liqueur is poured into a champagne glass, then chilled champagne is poured into the same glass. There are 2 options: pour on a wide knife, so that the "Layered" option would turn out, then you first drink champagne, then liquor gradually begins to mix with it and ends with pure liquor. In the second option, you randomly pour champagne and stir.

Kir-royal

The cocktail was invented in Burgundy and is especially popular in France. Named after Resistance hero, priest Felix Cyrus (1876-1968), post-war mayor of Dijon, where the Cassis de Dijon currant liqueur is made. There is a version that the cocktail in its current form was invented due to the fact that stocks of red Burgundy wines in the region were confiscated by the German army during the war. Some sources claim that in addition to this, the cocktail owes its appearance to one terrible lean year, when in Burgundy, except for dry sour wine and black currant liqueur, there was nothing to taste. The trade in the region suffered terrible losses at that time. It was then that Felix Cyrus decided to add liqueur to white wine.

In France, it is used as an aperitif before meals. Cyrus and its Cyrus Royal flavor are on the IBA Official Cocktail List as dry or semi-dry pre-meal cocktails. According to the IBA recipe, liqueur makes up a tenth of the volume, however, many recipes suggest bringing the liqueur content to a fifth, and French recipes for the predecessor blanc-cassis cocktail - up to a third. Traditionally, the Burgundian "Aligote" was used, nowadays different white dry wines are used in different regions, however, the preference is given to Burgundy.
Cocktail options can include champagne or vodka instead of white wine. It is also possible to replace Creme de Cassis with other liqueurs (blueberry, cherry, raspberry, peach).
