Ingredients

Smoked pork ribs 3-4 pcs.
Large potatoes 1 PC.
Medium carrots 1 PC.
Bulb 1 PC.
Piece of bacon optional
Garlic 2-4 teeth.
Any greens optional

Cooking method

  • Pour smoked pork ribs with cold water (on a piece of 3-4 small ribs - about 1 liter) and cook, remove the foam before boiling; cook over low heat until the meat is practically free of the bones. Remove the ribs, remove the meat from them, chop a little, return to the pan. Cut the bacon into small cubes, fry with finely chopped onions and grated carrots on a "beetroot" grater. If you don't want lard, you can "catch" pork fat from the surface of the soup and fry it on it. While vegetables are being fried, grate large potatoes on a "potato" grater and put in the soup, stir immediately. Add vegetables from the pan, add salt, pepper, add chopped garlic and herbs, let it boil briefly. Do not boil for a long time - the soup does not like this and becomes liquid.

Why Lithuanian-Russian cuisine - because garlic and pepper were not used in the national cuisine in Lithuania; maybe because they don't grow there? ..

I hope there is no such soup on the site; otherwise, I beg your pardon. My Lithuanian aunt Birute told me this recipe long ago.

These graters are called so in Lithuania - "potato" and "beetroot". Potato - the one on which there are three potatoes for potato pancakes, such as if the metal was pierced with nails; she is in your photo on the left. And beetroot - the one on which there are usually three beets, with even larger holes; she is in your photo on the right.
I have never tried this soup with sour cream; it smells of smoked meat, and you can find meat in it. But, I think, good thick sour cream will not hurt anywhere ...
