Ingredients

For dough:
flour 200 g
water 200 ml
fresh yeast 1 g
For the test:
flour 300 g
milk 150 ml
butter 40 g
salt 1 tsp
sugar 2 h l
fresh yeast 5 g
all dough

Cooking method

  • 1. For dough, dilute the yeast in water, combine with flour and leave to ferment for 12-14 hours at room temperature.
  • 2. Next, prepare the dough. Cut well-chilled butter into small pieces and grind into fine crumbs with flour, add salt and mix.
  • 3. Grind yeast with sugar. Heat milk to 30C and mix with yeast. Pour this mixture into flour, stir and let stand for five minutes. Then add the dough and knead the dough - 3 minutes at low speed, 4 minutes at high speed and another 3 minutes at low speed.
  • 4. Round the finished dough and leave to rise for 45 minutes, then fold and leave for another 45 minutes.
  • 5. Form a loaf by placing the dough on a cutting mat lightly dusted with flour and letting it stand for 45-60 minutes (until doubled).
  • 6. Bake at 220C for the first five minutes, then lower the temperature to 180C and bring to readiness (another 20-25 minutes). Before baking, grease the loaf with milk mixed with a pinch of salt and sugar and make cuts about 1 cm deep.
