Olivier with Tambov ham and Nashi pear

Ingredients

tambov ham 400g
pear nashi big 1 PC
eggs 7 pcs
small potatoes 5 pieces
green pea 200g
long cucumbers 2 pcs
capers 3 tbsp. l.
juice of half an orange
salt pepper on vacus
For refueling:
small shallot 1 PC
yogurt 3 tbsp. l.
mayonnaise 6-8 st. l.
dijon mustard 1 tsp

Cooking method

  • What is New Year's without the traditional Olivier salad? We deviate from the rules we are used to and prepare "Olivier" in a new way.
  • 1. Make a refueling in advance.
  • Chop the shallots as small as possible, mix with the rest of the ingredients and store in the refrigerator (from 1 to 6 hours).
  • 2. Bake potatoes in foil for about 35 minutes. Peel, cut into cubes.
  • 3. Peel the cucumbers, cut into cubes, salt generously, put in a colander and leave for a while.
  • 4. Peel the pears, cut into cubes and pour over with orange juice.
  • 5. Chop all other ingredients and mix with the dressing.

  • 6. Let it brew in the refrigerator for at least 2 hours.

It is the combination of mayonnaise, yogurt and Dijon mustard that makes the sauce tender. I love this combination.
But the pear just by its juiciness and neutrality in combination with capers and fresh cucumbers makes the taste of the salad unique! And also a Tambov ham. And orange juice ...

My salad turned out to be largely "based on".
The ham was replaced with boiled lean pork. It sounded good. On the next attempt, I do not exclude the option of a baked pig.
Boiled potatoes.
Shallots replaced with local pink onion (very neutral in flavor).
Capers do not grow in our area. I replaced them with olives. And that was the only puncture. Because the taste of olives has completely hammered other tastes. Next time I will try to replace olives with green olives (they are not so dominant). Or you have to give up completely.
Fruit mayonnaise based on Rominy apple. I diluted it a little with orange juice.
The overall impression of the salad is the most pleasant. The pear plays well, the orange note is refreshing. I will repeat it unambiguously. Thank you!
