Ingredients

Custard buns:
Water 450 ml
Butter 175 g
Flour 185 g
Eggs 6 pcs
Lemon cream:
Egg yolks 9 pcs
Sugar 150 g
Flour 50 g
Grated lemon zest from 2 lemons
Lemon juice 4 tbsp. l.
Lemon liqueur 7 tbsp. l.
Milk 500ml
For decoration:
White chocolate 300g
Wet meringue cream for 2 squirrels

Cooking method

  • This is a classic French festive masterpiece often served at weddings. In this recipe, it is garnished with white chocolate that holds many small custard buns together, and golden caramel strands. This cake is formed inside a cardboard cone, then the cone is turned over and the cake is taken out in all its glory.
  • The shape of the cake very much reminds me of a Christmas tree, so it will be very useful on the New Year's table.

  • First, make the choux pastry for buns. Add oil, a pinch of salt to the water and bring to a boil. Reduce the fire to a minimum, add flour and stir actively, without removing it from the heat for another minute or two. A shiny, smooth mass without lumps should form. Let cool for 5 minutes. Add eggs one at a time, whisking constantly. The dough should become like thick sour cream and shiny.

  • We transfer the dough into a pastry bag and squeeze small buns 2 cm in diameter onto a baking sheet. We leave a place between the dough so that the buns can rise. Bake for 25 minutes. until golden brown.

  • Beat the egg yolks, sugar, flour, lemon zest and juice in a bowl to form a smooth paste. In a large saucepan with a heavy bottom, bring 500 ml of milk to a boil. Once it boils, pour it into the egg mixture, stirring thoroughly. Then return to the pan and cook over low heat until the cream thickens and boils. Add liquor and transfer to a bowl. Cover with foil and allow to cool completely.
  • I don't really like custard, so I stuffed the buns with butter cream with condensed milk from 300 g of butter and a can of condensed milk.

  • Make a cone out of cardboard and fasten it with adhesive tape.

  • Line the inside with baking paper and place the cone in a vase.

  • Melt the chocolate in a water bath. Place a small bun at the very tip of the cone, bottom up. Spread 1 teaspoon of melted chocolate on the bottom of the bun and place the other two buns on top, securing with the chocolate. Spread another spoonful of chocolate on top. Fill the entire cone with buns, laying them in horizontal layers quite tightly and smearing with chocolate. Make sure the previous one is securely fastened before placing a new bun. The last layer should be flat. Place the finished cone in a cool place for solidification.
  • Gently flip the cone onto a flat surface and lift up the cardboard.

  • Decorate the Christmas tree as you wish. I dabbed a brush with wet meringue cream to make a Christmas tree in the snow. I made jewelry from marmalade. In the original recipe, the cake is covered with caramel strands, which is made from 100g sugar and 5 tbsp. l. water. I melted a few Duchess caramels in a water bath, pulled out thin strings with a fork and hung them on the Christmas tree.
  • It is easier at the table if one of the guests or the hostess breaks off the buns for each of them on a plate, starting from the top.
