Bohemian Lemon Blueberry Cake

Ingredients

Dough:
Butter 125 g
Sugar 125 g
Flour 150 g
Zest from one lime + 2 tbsp. l. juice
Eggs 4 things
Vanilla on the tip of the knife
Lemon liqueur 1-2 tbsp. l.
Cream:
Lemon juice 100 ml
Zest from one lemon
Sugar 100 g
Egg yolks 2 pcs
Gelatin 10 g
Cream 33% fat 300 ml
Impregnation:
Lemon liqueur 100-150 ml
For the top layer:
Cream 33% fat + 1 tablespoon icing sugar 250-300 ml
Filling:
Blueberry 200 g

Cooking method

  • 1. Separate the whites from the yolks. Soften the butter and beat with sugar until fluffy. Add yolks, lime juice and zest, vanilla one at a time. Add flour in several steps, at the very end of the liquor. Beat the whites until firm peaks and mix gently into the dough.
  • Bohemian Lemon Blueberry Cake
  • 2. Put the dough in a mold (D24 cm) and bake for 30-40 minutes until a dry skewer, cool on a wire rack and cut into three cakes.
  • 3. Soak gelatin in lemon juice. Heat the egg yolks with sugar in a water bath, beat slightly. Add the swollen gelatin and continue whisking until it doubles and thickens (about C80-82). Remove from the water bath, add zest and cool to room temperature, then combine with whipped cream.
  • 3. Soak the cakes with liquor. Put half the cream and half the blueberries on the first crust. Place the second cake layer and distribute the remaining cream and blueberries (you can leave some for decoration). Cover with the third cake and refrigerate for 1.5-2 hours.

  • 4. Whisk the cream and icing sugar and coat the top and sides of the cake. Decorate as desired.
