Note

Bulgaria is the oldest Orthodox country. The Bulgarian people are awarded by God with strong memory and respect for traditions. Therefore, even the socialist period with its irrepressible thirst for changing calendars and holidays could not change the logic of Christmas and New Year in this blessed country.
Therefore, Christmas is celebrated here on December 25, like in the Catholic Christian world, and the New Year does not break the Christmas fast, as in the Eastern Orthodox - fasting of communist neighbors.
Before Christmas, as it should be, December 24 comes in Bulgaria Bdni evening - our Christmas Eve. The evening is a holiday of anticipation, anticipation, preparation for the main miracle - Kolyada. This is what they call Christmas here. Ah, Bulgaria, and your Christianity is so homely, semi-pagan, Slavic!
For the evening in the houses and apartments of Bulgaria, people gather the most dear and close people. There are plenty of lenten foods on the tables - seven, nine or eleven courses. Why exactly so much - I do not know yet, I will definitely write when I find out. An obligatory symbol of this holiday is a ritual banitsa, plaque, mlyn, pita or pogacha with kesmeti. Kesmeti are coins and dogwood amulets invested in this miracle of culinary art, which bring happiness. And what kind of happiness you will get, you can guess by the shape of the figure. Bulgarian cuisine has prepared an excellent Lenten menu for Bdnya (Christmas Eve) - stuffed cabbage rolls without meat, boiled millet, chushki burek (read their recipe here), peppers stuffed with beans, compotes, pumpkin desserts, various pickles, vegetable stew. Garlic, onions, honey, nuts and fruits are not complete.
Evening fades into night. Children - koledarchata pick up dogwood branches go to carol to the neighbors. They knock on the doors, say Christmas carols - congratulations on the holiday and wishes for happiness and prosperity, pat the owners on the back with dogwood branches and receive refreshments - bread, sweets and fruits. In different regions of Bulgaria, carols are celebrated in different ways. In the villages of the Rhodope this is done by the squads of young men, in the vicinity of Sofia - the mummers - a man and a woman. But everywhere - with dogwood branches. But the custom of decorating a Christmas tree for Christmas somehow did not take root in Bulgaria. This tree will be for the New Year and mainly in cities.
And then Kolyada (Christmas) comes. And all Bulgaria is happy and eats, eats, eats! And the Bulgarian cuisine is so delicious!
And she eats pork with sauerkraut, stuffed chicken, meat gyuvechi, kapama, kebap, an idea with chestnuts ... And all this is filled with fine grape wine and brandy from their cellars. (https://Mcooker-enn.tomathouse.com/fo...o-i-novyiy-god-v-bolgarii)

Mistletoe, well, that bony carp! How to put it in a pie? Rather - how to eat it later? I love fish, and my family hates it because of the bones. How to be?
Omela

I cannot agree that you can refuse carp because of the bones. Buy carp at least 1.5-2 kg and there will be no problems with detecting bones.
Omela
Ira, Thank you! Only for this recipe you need small carp.
Irina Dolars
I also love all fish dishes. Thank you, Omela!
I tracked down but haven't yet used this method:

,, Some fish have a large number of small bones, which make the process of eating them quite difficult and not even safe.

You can get rid of them in the following way:

Cut the fish along the ridge (there are mostly small bones). Take a lemon, cut into rings and insert into the cut. Leave the fish for a while, depending on its size. The secret is that lemon juice dissolves calcium, so the small bones should dissolve and the large ones become soft. "

Can anyone use it? And will he fit here?
Creamy
Irina Dolars, I was very interested in your proposed method of getting rid of bones. A year ago, they searched for me in the emergency room in the ENT department for a long time and with difficulty pulled out a small fish bone from the root of the tongue. The fish was river. I still love fish, but now I cook broth out of small change and filter it. Now I am trying to buy big fish. and I will definitely try your way. I will cut the fish along the ridge and process one half with lemon, leave the control one without lemon. Then I will compare. Thank you very much for the hint.
Twist
Ksyusha, I have never done carp in the test. He must be very gentle. I took it to the bookmarks. Very fun to try!
Omela
Irina Dolars, I have not heard about this method, thanks, I'll try!

Marisha, Thank you! It turns out very tasty. And the dough, and the filling, and the carp itself.

Ksyusha, what kind of bread recipe do you use? - I poke at the word "this" and generally throws me out of the forum
Omela
Irish, corrected.

Vooot, a completely different matter - thanks Girls, before cutting the back along the ridge, take a blade or a very sharp knife and make deep cuts very often across the back on both sides, thereby you will cut the smallest, sharpest and most dangerous bones with the blade, which is dark in small carps, and then drip lemon juice into these cuts
