Ingredients

Dough:
milk 80ml
flour 30 g
fresh yeast 5 g
sugar 2 h l
light honey 2 h l
Dough:
flour 270 g
natural yogurt (thick) 30 g
butter 30 g
rum syrup 50 ml
salt 0.5 h l
lemon zest 0.5 h l

rum 100 ml
light honey 2 tbsp
For filling:
light raisins 50 g
rum 2 tbsp
For sprinkling:
walnuts 30 g
powdered sugar

Cooking method

  • 1. Bring honey and rum to a boil, reduce heat and simmer for 5 minutes, stirring continuously. Cool to room temperature and pour 50 ml. The remainder (set aside about 30 ml for now).
  • 2. For the dough, grind the yeast with sugar, dissolve the honey in milk (30C) and combine with flour. Stir until smooth and leave for 20-30 minutes.
  • 3. Mix flour with salt and lemon zest and rub with cold butter by hand until crumbly. Combine with ready-made dough, add yogurt and rum syrup. Knead smooth dough for five minutes at medium speed and leave to rise for 50-60 minutes.

  • 4. Put the finished dough on a flour-dusted cutting mat, stretch it with your hands into a rectangle about 1.5 cm thick. Fold the dough in three, lightly roll the resulting "sausage" and divide into pieces weighing 70-75 g. Then gently stretch each piece into a round cake , put the raisins in the middle and shape into round buns.

  • 5. Grease the buns with milk, sprinkle with nuts and leave to proof for thirty minutes (until doubled). Bake in an oven preheated to 200C for the first five minutes. Then lower the temperature to 180C and bake for another 15-20 minutes. Grease the buns with milk again before baking.
  • 6. Put the finished buns on a wire rack and brush immediately with the remaining rum syrup. Sprinkle the cooled buns generously with powdered sugar.
