Ingredients

Wheat flour
(I made wheat / whole grain - 200/100)
300 g
Rye flour 280 g
Dark beer
(I took Velkopopovitsky Goat Dark
it has a superb bready aftertaste
and low alcohol content,
Zhatetsky Goose Dark is also suitable
it has a similar, but less intense and uniform aftertaste)
400 ml
Oil
(instead of butter, I added margarine,
to get better)
20-25 g
Salt 1 1/2 tsp
Sugar 1 1/2 tbsp. l.
Caraway 1 1/2 tsp
Dry yeast 1 1/2 tsp

Cooking method

  • The products were put in the order in which they were listed, except that the sugar and salt had been previously dissolved in the beer; at the same time the beer was actively grinded and allowed to settle (released gases).
  • The bread was prepared in the Panasonic Bread Maker on the 07_Rye mode (duration of the mode - 3:30, baking time - 1:00). No strong or unpleasant odors were noticed when baking.
  • The result is an amazing rye bread with a delicate and firm crumb, crispy crust and a taste that I cannot describe, but I will say that I have never eaten such delicious food. Mmm, eat your mind!
  • PS: I want to note that I cannot agree with the members of the forum who wrote earlier that bread smells like beer. EVERYTHING DEPENDS ON THE BEER! If you use only Goat or Goose, which do not have unpleasant flavors, then your bread will turn out exactly as you expect it. No ... it will exceed your expectations.

Volkodav, thank you very much! I bought a bread maker specifically to make such bread !!! One delight! Indeed, the mind can be eaten away! True, I allowed myself to replace margarine with olive oil (1.5 tablespoons) and add 2.5 tablespoons. l. cumin. Just great! P.S. the bread yield turned out to be 910g. Thank you and good luck!
