Austrian Christmas carp

Ingredients

Carp 1 kg.
Anchovy fillet 1b. (180g.)
Bacon (brisket) 100g.
Bulb onions 1 PC.
Tomato puree 3st. l.
Cream 200g.
Vegetable oil 2st. l.
Salt, pepper to taste

Cooking method

  • 1. Peel the carp, gut, make a longitudinal cut along the back and separate the fillets.
  • 2. Cut each fillet into 2 pieces.
  • 3. Dry the anchovy fillets from the oil.
  • 4. Place 2-4 pieces on each half. anchovies to taste. The more, the sharper. Of course, I got excited, it turned out pretty sharp.
  • 5. Roll up or fold in half. Tie with culinary thread.
  • 6. Finely chop bacon, fry, add finely chopped onion, fry for 5-7 minutes.
  • 7. Add tomato paste, cream and bring to a boil.
  • 8. Fry the carp rolls, put in a fireproof dish. It is best to carefully cut the threads at this stage. I did not do that and it was very inconvenient to remove them in the finished dish.
  • 9. Pour the carp sauce and simmer in the oven at 200C until cooked for about 40 minutes.
