Green tomato caviar with vegetables

Ingredients

large green tomatoes 6 -7 pcs.
large onions 2 pcs.
large carrots 1 PC.
bell pepper red 2 pcs.
garlic 3 - 4 cloves
cilantro, basil 1/2 bundle
hot pepper several rings
sugar 1/2 tsp
vinegar 1 tsp
salt
sunflower oil

Cooking method

  • Delicious caviar is obtained from green tomatoes!
  • Cut the tomatoes into medium pieces, about 5-6 mm thick, so that they cook quickly. Salt the tomatoes in a bowl and leave for 15 minutes. Meanwhile ...
  • Chop the onion and fry until slightly golden brown, add the carrots and also fry under the lid.
  • Squeeze the tomatoes from the juice, I also wash them with water to remove salt and seeds.
  • Add tomatoes to sautéed vegetables. Simmer until soft, add chopped bell pepper, fry a little together. The caviar should not be watery.
  • Add salt, sugar, vinegar, crushed garlic, chopped greens to taste and keep on low heat for another 5 minutes.
  • Serve as an appetizer, side dish, or simply with bread.

Giraffe
Is it not suitable for the winter? I'll do it for dinner today.
Elenka
giraffe, Tanya, of course you can! But, you need to fry well, add a little more preservative (vinegar), sterilize the dishes, spread the caviar and wrap the jars well until they cool completely. Or another sterilization option is to sterilize caviar from jars in boiling water, 0.5 liter jars for 15-20 minutes.
The main condition for tasty caviar is that tomatoes must be tasty. After all, this is an unripe vegetable and is sometimes very sour, sometimes with a smack. I had tomatoes of milky ripeness and sweetish taste.

Elenka, Helen, very tasty recipe, I did it today!
I even rolled up one jar. From this amount, approximately 2 jars of 0.5 liters are obtained.
