Potato buns with baked garlic

Ingredients

dry fast-acting yeast 1.5 tsp
premium wheat flour 450 g
potatoes (boiled weight) 130 g
salt 1.5 tsp
granulated sugar 2 tbsp. l
milk 200 ml
butter 25 g
odorless vegetable oil 1 tbsp. l
garlic 1 head
1 yolk + 1 tbsp. l milk for the top
sesame seeds for sprinkling optional
2 tbsp. l melted butter optional

Cooking method

  • Cut the garlic across the cloves. Make a "boat" out of foil, grease a little with vegetable oil. Put the garlic, cut up, brush with some vegetable oil and sprinkle with coarse salt.
  • Potato buns with baked garlic
  • Bake in the oven until tender (about 30 minutes) at 180 degrees, cool.
  • Boil the potatoes until tender, cool (drain the water completely). Select garlic pulp from the husk, add to the potatoes. Add half of the warm milk and salt, puree with a pusher or blender until smooth.
  • Put all the ingredients, except for butter and vegetable oils, and two tablespoons of flour from the total amount in a bucket of a bread machine or in a bowl of a food processor. Turn on the batch, after 7-8 minutes, stop the batch and pause for 10 minutes. Add butter, oil, remaining flour and knead the dough. The dough is soft, the bottom of the bucket is not smeared. Leave the dough to rise for 1.5-2 hours.
  • Dust the table with flour, lay out the dough, knead, roll into a ball and leave for 10 minutes. Wrinkle again and divide into 10-12 pieces. Form a round bun from each piece of dough and place on a baking sheet lined with baking paper. Cover with plastic wrap, proof - about 20 minutes, buns should be doubled. Using a soft brush, brush the buns with a mixture of yolk and milk, sprinkle with sesame seeds.
  • We bake buns in an oven preheated to 230 (210 convection) degrees with steam. After 5-7 minutes, lower the temperature to 200-210 degrees (180-190) and bake until cooked for about 10-15 minutes, the baking time depends on the oven.
  • Grease the finished buns with melted butter, cover with a towel and leave for 10-15 minutes, then put on the wire rack and let cool completely.
