Creme brulee coconut

Ingredients

Coconut milk 100 ml
Sugar 20-25 g
The yolk of large chickens. eggs 1 pc (from 20 g)
Vanilla pod ~⅛

Cooking method

  • Heat coconut milk to steam, do not boil.
  • Creme brulee coconut
  • Cut the vanilla pod lengthwise, open and scrape off the vanilla seeds.
  • Creme brulee coconut Creme brulee coconut
  • Add vanilla to milk, stir well.
  • Creme brulee coconut
  • Can be replaced with vanilla essence, if not, use vanilla sugar.
  • By the way, vanilla sugar can be made at home by sticking a used (empty) vanilla pod into an airtight jar of sugar.
  • Creme brulee coconut
  • In a day, the sugar will begin to smell sweet. Then just add sugar as you use it and shake the jar.
  • Stir the yolks with sugar until the latter is dissolved.
  • Creme brulee coconut Creme brulee coconut
  • Since the eggs were small, I took 3 yolks, by weight the yolks should be at least 40 g. I got about 45 g.
  • Stir the milk with a thin stream to the yolks. Try to avoid bubbles, we don't need foam.
  • Creme brulee coconut
  • Strain the mixture into portion molds through a sieve.
  • Creme brulee coconut
  • You need to bake the cream in a water bath. To do this, you need to put the molds in a large deep form and fill at least half with water.
  • Creme brulee coconut Creme brulee coconut
  • It is more convenient to do this directly in the oven.
  • Bake in an oven preheated to 180 ° C.
  • Check readiness after 20 minutes. If not ready, then check every 15 minutes.
  • The cream will be ready when the middle trembles jelly, if you move the mold, and a toothpick / skewer stuck near the edge comes out dry.
  • My cream was baked for 35 minutes.
  • Creme brulee coconut
  • If the cream is overexposed or baked insufficiently immersed in water, then it can become coarse and even let the juice out, - to exfoliate. Too high a temperature will do the same. With insufficient t, the cream can be baked for up to one and a half hours.
  • The smaller the molds, the less time it will take to bake. Careful, do not overexpose! The cream thickens well in the cold.
  • When ready, remove the molds with cream from the oven and from the water. Allow to cool at room temperature and cool well for at least 4 hours.
  • Make a caramel crust. To do this, you can sprinkle the surface of the cream with brown cane sugar and melt it with a burner (not only kitchen, but also tourist is suitable).
  • Creme brulee coconut Creme brulee coconut Creme brulee coconut
  • Or you can melt sugar in a bowl with a thick bottom, caramelize it and, until it thickens, pour it over the surface of the cream, return it to the cold again so that the crust grabs.
  • We will get pleasant entertainment (everyone loves the game with food from an early age) - we will, by tapping, break a caramel crust with a spoon, like ice on puddles in childhood. What a pleasant sound! And of course the taste! And the taste turned out to be very delicate, not creamy, with an almost imperceptible coconut accent.
  • Help yourself!

If you have a choice, take it with a "pieza" - it ignites from pressing a button, matches and others like them are not needed, and it is very convenient!

Daaaaaa1 recipe bomb! Yesterday I looked at him, tried to persuade myself until nightfall that it would not work without a burner. In the morning I returned to the recipe and understood what to do. But there is still no burner, so I think, but if you use a lighter in the form of a pistol, with which the gas is set on fire, will it be possible to make caramel?
Arka
We have 2 options
of this type, only the manufacturer is different, - ignited by a piezo

Creme brulee coconut

and this type - ignited by fire

Creme brulee coconut

both options fit onto a small gas cartridge

if the flame is strong enough it should be
you can practice simply on sugar sprinkled on foil, in some heat-resistant container (frying pan, saucepan ...)

Make caramel in a frying pan, pour into a mold (it will immediately become hard), pour the "dough" on top and then - molds into water and bake. After baking (preferably warm or cold), turn over on a saucer or dessert plate. There will be a beautiful shape and thin caramel on top, which will flow beautifully, as in the pictures. I do this: 🔗

Handsomely! And very close.
True, I personally never do such creams on whole eggs - I don't like the omelet flavor, no matter how cool it is.
And it is better to bake for so long in a general form, and not in portioned form, otherwise the chance of overexposing is very great.

In short, go for it and share your options and impressions!

Arka, so still ... And if on cream, add the sugar to the drain?
sorry, I didn't notice
coconut milk is barely sweet, almost like cream
take the same amount of sugar
and if there is coconut flakes, then you can boil it in cream over low heat, and you get coconut cream
Quote: manna

I haven't tried coconut milk nikada
it is so viscous, fatty, with a slight coconut flavor

Arka, what do you think, in a multicooker such a thing will stratify? I think what to cook
In the airfryer, I think it will dry out on top ...

in the airfryer it should turn out, in the end you can cover it with foil, and probably you can pour water on the bottom and put it directly into the water
in MV I don't even know which regime to recommend
... unless a multi-cook 160-180 degrees (is there 180 in MV?) in a water bath
or try how you make your pudding, just immerse at least 1/2 of the mold in water
