Ingredients

zira 1 tsp
sweet ground paprika 2 tsp
salt 1 tsp
melted butter 2 tbsp. l.

Cooking method

  • The dish is quite famous. It's surprising that he is still not here (I did not find it, if anything, don't hit it). I took one of his many variations in the Deli book. The differences are most often in the variations of spices. Instead of yoghurt, curdled milk may well be used, but then the lemon juice should be halved.
  • Nothing complicated, nothing terrible. If you are not a fan of spices - nafig this tandoori, we are preparing something else. Because this is an oriental style, but not sharp, do not be alarmed. Chicken with a very unobtrusive and pleasant taste. If you like a more pronounced "oriental" - increase the amount of spices.
  • So...
  • 1. Pour saffron with boiling water (3 tablespoons) and let it brew.
  • 2. Rub the chicken with lemon juice and leave for 10 minutes
  • 3. Pour saffron infusion over the chicken and let it rest for another 30 minutes.
  • 4. Fry the seeds of cumin and coriander in a dry frying pan for 2 minutes. The spices are revealed from this, essential oils are released.
  • 5. Put cumin and coriander, garlic, ginger and other spices in a blender / mortar (instead of red pepper, I have literally a few drops of Tabasco, although the original is chili pepper. But I don't really want to feed spicy children). Grind into a paste. Add yoghurt, butter and stir.
  • 6. Put chicken in marinade or marinade in chicken (whichever is more convenient) and leave for 4-6 hours at room temperature. It is possible for the night. But then in the refrigerator.
  • 7. Put the chicken in an ovenproof dish and at 200g. bake for 1 hour. Turn over in the process.

Note

Chicken is usually taken. I mean, the whole chicken is cut into pieces. Since children prefer shins, I went along with it. In my opinion, there is no difference. The main thing is chicken and choose the right amount of spices.

And I love cumin so much. At least I always hated coriander in meat (in bread, again), but I decided that for some time I had to do it right, and not randomly with replacing / throwing away ingredients (which I suffer catastrophically)))) ... Nothing terrible happened, the coriander fit perfectly!
And be sure to prepare a side dish for it. And not a salad. I think rice is best. Rice in the east is the main cereal and it is extremely suitable for such a chicken. So much fragrant, uniquely tasty and beautiful amber yellow (if saffron is present) sauce remains in the form !! That they definitely need to pour something! Rice will be incredibly tasty and beautiful.

Please note that yogurt is not a glass (in the sense in which it is packaged, it usually contains 125g), but a standard glass, that is, 2 store glasses.
