Chocolate curd-coconut cakes

Ingredients

Streisel:
- flour 1/2 cup
- cocoa 1.5 tbsp. l
- sugar 75 g
- butter 60 g
____
Filling:
- cottage cheese 250 g
- eggs 2 pcs
- starch 1 tbsp. l
- vanilla sugar 1 sachet
- coconut flakes 1-2 tbsp. l
- sugar 50 g

Cooking method

  • 1. We make Streisel in a blender.
  • 2. Beat the filling with a mixer.
  • For baking in the form:
  • Put 2/3 of the steisel on the bottom, pour the filling on top, sprinkle with the remaining streusel on top.
  • Bake in the oven at 200 C - 30 minutes
  • For baking in a 4-slot cupcake:
  • We pour streusel in 1 tbsp. spoon with a mountain in each cell, we make a light dimple and there 2 teaspoons with a slide of filling.
  • From above a little Streusel, it is better not to sprinkle too much on top!
  • And that part may remain crumbs, it will crumble when taken out.
  • More or less like this:
  • Chocolate curd-coconut cakes

The dish is designed for

12 pieces

Time for preparing:

10-12 minutes - 1 batch

Cooking program:

Cupcake for 4

Note

The cake is light and crunchy!
A good alternative to muffins in a cupcake

I baked without pieces of paper, after each batch, a little crumb remains at the bottom, it is not scary, but it would be more accurate to bake in pieces of paper, while the baking time may increase slightly.

They can be easily removed if you work with such a narrow silicone spatula.

Of course it will do!
The first option for the form is just in the oven, now I will add a note to the recipe
If done in small tins in the oven, then I don't know the time.
Landmark - curd should rise with a good hat.
True, when you take out the cakes, they fall off a little, this is normal.

That's so beautiful!
And how on time!
Straight tomorrow and fancy!
Thank you)))

Bookmarked, thanks !!!

julifera, thanks for the unusual recipe. Made it today. True, I didn't get 12 pieces, and only 8 pieces came out of one and a half portions. Baked in paper sockets.
And I think I overexposed them. In my oven, 30 minutes is a lot for them. And this despite the fact that the temperature gave 190 *.
Probably here everyone should be guided by their own oven.
While I was trying the dough, it seemed that it was bitter, the cottage cheese was not sweet, but after baking everything changed. The taste is very harmoniously added to each other. I really liked it. Thank you!!

By the way, they went up very well. It seems that there is no baking powder, but the pies have grown very well.

husky - my first batch was baked too, but still very tasty
30 minutes is if in a solid form, but for small ones it is already experimentally calculated
I'm very glad that you liked it

Cooked on the weekend. I saw that this is a very tasty use of cottage cheese. She herself did not even expect that it would be so easy and quick to prepare these cakes. Thanks for the recipe. With such simplicity of manufacture, you can cook them instead of syrniki in the morning.

juliferaI liked the cakes very much.
What you need for lovers of cottage cheese and coconut.
Baked in the oven in muffin tins for 25 minutes - excellent.
From a double portion, 18 pieces turned out.
Most of all I liked that the filling is tender and the bottom is crispy.
And then at first I could not understand where the crunchiness would come from)))
A great quick option for disposing of excess cottage cheese.

What cute cakes! Only I have such a question. I once sculpted a cheesecake with a curd-coconut filling, and this coconut in the curd felt like tasteless sawdust. There was not even a trace of coconut smell ... The author of the recipe assured that you shouldn't even start without coconut flakes. So I think, whether it was such shavings that I got, or this is a matter of taste. What does coconut flakes taste like in your pies?

If you make 1 tbsp. l - then the coconut is practically not felt, it is interrupted by the chocolate taste, according to the structure of the cake, shavings in such an amount are not felt at all, I advise you to start with this minimum.
2 tbsp. l - this is already for good coconut lovers

Well, the quality of the chips matters. I always try before opening the pack, one had to be thrown away - some wooden ones were caught, sawdust has a place to be, try so as not to run into the muck.
And I could not find the date on the pack, maybe they were old.

Thank you! I'll have to try to put less coconut shavings, otherwise I dumped a whole pack (well, it was according to the recipe - it seemed to me that in general it would turn out a solid coconut, but the result was hardly edible sawdust)

Yesterday I made one and a half portions again.
What kind of smell is there when baking is impossible to convey!
I put the coconut fully, practically not felt, light taste.
Most likely depends on the quality of the coconut.
Double portion 18-19 pieces.

Delicious.)))

Over the weekend I made these goodies 3 times. I came to a rationalization conclusion for a large, no, a huge family, I do two or three times more and put it on a sheet. It turns out to be a large weaving cake. Then I cut into portions. It is also tasty, less time. And then I drove the oven several times for the first time. Breakfast is now ready in one go. Thanks again for the recipe. Now this is one of the best breakfasts for our family.

Thank you very much, I was looking for a recipe that I didn’t know, and I wanted a little chocolate, and the cottage cheese had to be used, and the open bag didn’t give any rest to the coconut flakes, but here is such a surprising recipe. I cooked it very quickly, although Streisel mixed it with her hands, since the blender did not work, I rolled 12 balls from it (I crumbled half of the ball to the bottom of the molds and half from the top), so that it was enough for 12 servings. I had a silicone mold and in it in the airfryer the bottom is poorly baked, so I turned it over. The children dared the first portion, so I added the rest of the cottage cheese to the filling and rubbed another banana to make more muffins (the shape allows). Fantasy!!! I don't often get baked goods of their cottage cheese, but here um. Once again, MANY THANKS !!!!

julifera, Yul, thank you !! delicious, incredible!

I have already baked a very successful recipe with coconut a couple of times and here - just appropriate, everything in moderation, an excellent recipe!

I put in cornstarch, and baked for 20 minutes at 200, touched the caps - they were still tender, then I baked them for another 5 minutes in the turned off oven. and my mistake - in vain I put them in paper molds, now I nibble from pieces of paper, I go to bake in oiled molds just.

very tasty thank you for sharing !!

but did not crumble! my baby strove a bit to stay in the mold

news from the fields - if you let them cool a little, and not to eat grab hot right from the oven, then they are very well separated from the pieces of paper, so the oven is fine in the pieces of paper, yes
AlenaT
And how great they are jumping out of silicone molds:
hot or cold ...
Yummy!
They have a very catchy taste!
