Cooking method

  • I am preparing a spicy sauce from berries (gooseberries, red currants) using the technology of making tkemali.
  • Today I made it from gooseberries. Wash, peel, chop the berry. Boil for 20 minutes, adding a little water. Rub through a sieve. Grind the cilantro greens together with hot peppers, garlic, oregano (you can take it dry) and put in the mashed mass. Add salt and sugar to taste.
  • The sauce should be the thickness of liquid sour cream.

  • Pour hot into hot sterilized bottles. Cork.
  • Can be stored for a long time at room temperature.

2. I poured some water over the berries, steamed them on the stove and rubbed them through a sieve. Added all of the above ingredients and brought to a boil.

For me, both are delicious. Stored at room temperature, if the jars are well sterilized in the oven at 120 g, pour the boiling sauce into the jars and close with sterilized lids.

Lily, to your health! Try it individually, together, in different combinations. There are no such exact proportions here. Frozen berries can be chopped, rubbed without boiling, and then mixed with spices and then brought to a boil, if necessary, add a little water.
You should get the thickness of sour cream. I would be glad if you like it ...
