Pumpkin muffins

Ingredients

pumpkin puree 150g
granulated sugar 110 g
vanilla sugar 1 tbsp. l
vegetable oil (odorless) 50g
eggs of 1 grade 2 pcs
wheat flour 190 g
baking powder 1.5 tsp
salt pinch
lemon or orange zest (optional) 0.5 tsp
raisins 100 g
starch 1 tbsp. l
powdered sugar for serving optional

Cooking method

  • Peel the pumpkin, cut into small pieces (about 270-280 g) and bake until tender in the oven or in the microwave (5-6 minutes), drain the excess water, puree the pumpkin with a blender, cool.
  • Pour boiling water over the raisins.
  • Beat eggs (room temperature) with a mixer with granulated sugar and vanilla sugar. Beat for about five minutes.
  • Add pumpkin puree, oil. Mix.
  • Mix flour with baking powder and sift into egg-pumpkin mass, mix.
  • Throw the raisins on a sieve, shake to remove excess moisture. Add 1 tbsp to the raisins. l. starch, mix.
  • Add raisins to the dough.
  • Grease the muffin cups with butter (paper should not be greased), spread the dough 3/4 of the volume of the muffins.
  • We put the muffins in an oven preheated to 180 (convection 160) degrees and bake for about 20-30 minutes, the baking time depends on the size of the molds and on the oven. The match comes out dry from the finished muffins.
  • Remove the muffins from the molds and cool.
  • Sprinkle the muffins with powdered sugar before serving. Bon Appetit!

Simple cupcakes from the "haste" series, very good for an afternoon snack with a glass of milk or a cup of tea. The pumpkin is not felt at all in them, but thanks to it the baked goods are tender and "moist".

Digression: Less sugar and no raisins. Next time I'll add some nuts and maybe honey for a scent, and more cinnamon (my favorite combination).

I have an unsuccessful pumpkin lying around. None - no color, no sweetness and pulp from a gulkin's nose. However, the puree turned out to be 300 gr. Therefore, I made a double rate of the recipe and did not regret it. It turned out 18 muffins.
I adjusted the recipe a little along the way - the watery pumpkin made me add more flour, the husband does not like zest, added walnuts.
We rose well. Now they will cool down - I will cover with lemon glaze and I will wait for the expert ...

It's like winter for me, so baking with pumpkin is always so! Very tender and with a good porous crumb. Some with a flat top, while others are clumsy, there are prunes mixed in.
