Shortbread cake with cottage cheese and plums

Ingredients

Dough
Flour 300g
Sugar 60g
Butter 125g
Egg 1 PC
Baking powder 1h the spoon
Filling
Cottage cheese 18% 250g
Sour cream 120-150g
Egg (separate yolks from whites) 3 pcs
Sugar 100g
Starch 3 tbsp. spoons
Plum 12-15pcs

Cooking method

  • Knead the shortbread dough from the indicated ingredients, wrap in a bag and put in the refrigerator for at least 30 minutes.
  • Wash the plums, remove the seeds. Mix cottage cheese, egg yolks, sugar, sour cream and starch. Beat the whites into a strong foam and add to the curd. You will get a fairly liquid curd mass. (I also added a couple of tablespoons of baileys liqueur to the curd mass)
  • Grease a baking dish (I have a diameter of 20 cm) with oil, form the sides and bottom from the dough. Put the plums cut into halves and pour over the curd mass. Bake at 200 degrees ~ 50 minutes.
  • Let the cake cool down.
  • Actually, the pie is like a pie. But I really liked the curd mass, it keeps its shape well. After baking, it did not fall a centimeter, it looks great in the cut.

Thanks for the recipe. Baked with small changes: instead of 18% cottage cheese, well, there is no such fat, put 5% cottage cheese mass 300g. And so I reduced the sour cream. And so everything is according to the recipe.

I did it with pickled plums and fresh ones, but the unexpected happened ... I mixed up the sequence of placing the ingredients on the dough (I was tired in a day - 5 hours at the stove). The plums were on top, but this did not affect the taste at all. Decorated with almond petals and powdered sugar. Uploading a photo, alas, also fails. The new flash drive cannot be read on this computer. If I get to another one, I'll try to post the result.

I do not understand! How such a delicious and so easy-to-make pie still has so few rave reviews!?! Has already burned many times in different versions. Once I forgot to put the starch, it still came out fine. I stopped putting the dough in the refrigerator - it is easier and faster to mold the sides and the dough itself comes out more loosely (exclusively my opinion).There are many good recipes on the site for different occasions, but there are some that become loved, irreplaceable, family ones. This is exactly the case.

Instead of sugar, I put buckwheat honey in the dough, so it is dark. Fragrant! As an experiment, and since you need to attach plums, I put more of them than in the recipe, and less cottage cheese filling. From the drain in the center came out a little wet. But it doesn't matter.

The cake does not get wet at all during baking, it has a good rise, although the curd mass with which we pour the raw dough is quite soft (pouring). What I didn't like was the plums. Well so sour !! Just take your eye out. The plums seem to be ripe.
Maybe in their middle it was necessary to pour sugar? Or maybe it's my plum. I will definitely repeat, but with something else. The curd filling really holds its shape well after baking. Moderately sweet, very tender.
