Wheat-rye bread with additives (in a bread machine).

Ingredients

High quality wheat flour 335 g
Rye flour 130 g
Yogurt + milk + water 300 ml
Apple vinegar 30 ml
Sl. oil 30 g
Honey 1 tbsp. l
Brown sugar 1 tsp
Salt 1.5 tsp
Cocoa 1 tsp
Yeast 1.5 tsp
Sunflower and pumpkin seeds 2-3 st. l
Sun-dried tomatoes 1 sec. l.

Cooking method

  • I have the order of laying in a bucket, first liquid, and then dry ingredients, then in accordance with:
  • 1. Pour 100 ml of yogurt into a measuring cup (I had goat's 3.6% fat), add 100 ml of milk and bring it to 300 ml with water. Pour into a bucket.
  • 2. Add apple cider vinegar, oil (pre-softened or melted, but not hot). Butter can be replaced with vegetable oil - 1.5 tbsp. l.
  • 3. Sift the flour and add it to the bucket.
  • 4. Add salt, sugar, yeast and cocoa.
  • I also added a baking improver (in our Israel it is sold in 10 g bags. It contains gluten, malt and ascorbic acid). I deliberately did not indicate it in the ingredients, because I do not know what analogues you have.
  • 5. Lightly fry the peeled seeds in a pan, chop the tomatoes finely (if you intend to use a dispenser, mix with a pinch of flour). Add to the dispenser or at a signal - usually during the second batch.
  • The gingerbread man should not be too dense, but not liquid either. A light comma is allowed at the end of the first batch.

Note

The bread rose very well, but the roof blew up during baking. I think it's from excess yeast (I put 2 tsp.). Therefore, the recipe indicated a smaller quantity.

I have a Morphy Richards 48319 bread machine. Due to the fact that it is not on the list, it is impossible to add it to my profile. This oven does not have a rye setting, so I used whole grain.

The basis is taken from a recipe for Pumpernickel bread from a neighboring forum. For which I am grateful to the author.
