Chimichanga with guacamole sauce

Ingredients

ground beef 500 gr.
red onion (golden or white can be used) 1-2 onions
tomato 1-2 pcs. (You can replace 1-2 tablespoons of tomato paste)
garlic 1-2 cloves
hot pepper 1/2
avocado 3 pcs.
lime (lemon can) juice 1 PC.
cilantro 1-2 bundles
salt taste
corn tortillas 8 pcs.
Cheddar cheese (can be substituted with any hard cheese) 100-150 gr.

Cooking method

  • Preparing the meat filling for the tortilla:
  • Chop the onion and lightly sauté, with the appearance of a specific onion smell, add chopped garlic and hot pepper, lay out the minced meat and diced tomato. When the red minced meat turns brown, add a little water and simmer for about 50-60 minutes.
  • While the meat is stewing, prepare the guacamole sauce.
  • Mash the avocado pulp with a fork, add finely chopped onion, then chop finely hot pepper and garlic. To make the pepper and garlic more juice, we lightly salt them during the chopping process, and then lightly rub them with the plane of a knife on a cutting board and send them to the mashed avocados, pour with lime juice, sprinkle with olive oil, add chopped cilantro, mix and the sauce is ready.
  • We return to our cakes.
  • We spread a generous pinch of grated cheese on the cake, put the minced meat on the cheese, wrap it in a roll and send it for frying in a large amount of olive oil. Roasting takes about 3 minutes. Put the fried rolls first on a paper napkin, and then on a plate and serve with guacamole sauce.
