Marinated mushrooms

Ingredients

Processed mushrooms, boiled 2 liter cans
water 5 glasses
salt 1 tbsp. spoon with top
sugar 3 tbsp. spoons without tops
black peppercorns 7-10pcs
allspice 5 pieces
vinegar 9% 1 glass

Cooking method

  • Put the mushrooms in a saucepan, pour 5 glasses of water, cook for an hour. 5-10 minutes before the end of cooking, add 1 tablespoon with top salt, 3 tablespoons without top sugar, 7-10 pcs. black pepper, 5 pcs. allspice, 2 bay leaves. When cooked, pour in 1 cup 9% vinegar filled with Maruskin belt. When it boils, put in sterilized hot jars. Roll up. Or close it in any other usual way.

We were very lucky this year. It rained just before our arrival in Ukraine. Therefore, on vacation we did our favorite thing: picking mushrooms. And they were very nice: strong, small and clean, they grew up in families from 2 to 10 pieces. We got unspeakable pleasure.

Very close to Kiev: Zhitomir, 15 km towards Lviv, Bondartsy. In Bondartsy, cross the bridge and then, where you will not go, if there are mushrooms, then they are. I have heard about these places all my life, but only this year they took us there. We also collected panna, and not only mushrooms, but also eggs.

This is the Veselka mushroom, in Ukraine it is called panna. The mushroom is very valuable from a medical point of view, but it is especially appreciated even in its "embryonic" state. And this state looks like a dense jelly-like egg. In the Zhytomyr region there is a village where residents eat these eggs raw, and they do not know what oncology is, and the life expectancy there is quite high.
Every year, when we go on vacation, we buy panna eggs at the bazaar. One egg costs 15 hryvnia. In order to make a 3-liter tin of tincture, you need 15 eggs.
We have collected mushrooms before, but eggs - for the first time.

Sash, this is my daughter-in-law's recipe. They keep everything in the basement of the garage.
We are at home with these banks, in Ukraine we also took a photo from Ukraine)). And when we came back from vacation, I did the same in Vladimir. It seemed to me that there was not enough liquid, so I cooked in a cartoon so that the marinade would not boil away. And I put the finished cans in the pantry, we have a small one in the entrance. I'll see how they stand. I think you don't need a refrigerator, but you shouldn't store it in the heat either.
