Ingredients

Odorless vegetable oil 1/4 cup
Eggs 2 pcs
Flour 2 cups
Baking powder 2 tsp
Soda 1 tsp
Sugar 2 tbsp. l.
Salt 0.5 tsp
Vanillin 1 g
Kefir 2 cups

Cooking method

  • Mix separately liquid and separately dry ingredients. Then knead the dough, do not stir it for a long time, otherwise the pancakes will be rubber (I made just a few movements, lumps remained in the dough, but they parted during baking). Let the dough stand for about 10 minutes. Heat a small frying pan over low heat, brush well with butter (only once). Spread the dough in a frying pan in a layer of 5-7mm, fry over low heat, be sure to cover it !!! until the pancake seizes on top. Then turn it over to the other side and fry it without a lid.
  • Serve with any topping.

From this amount of products, I got 7 pancakes. The recipe is similar to our pancakes, but only similar, the taste is completely different and not pancakes or pancakes, but donuts), airy, slightly sweet and absolutely not sour). Today I did it for the first time and strictly according to the recipe. In half a portion, I spread pancakes twice in a frying pan with a diameter of 26 cm. They practically do not creep at all. My only subjective opinion: the first tab on the pan (as soon as the dough is kneaded) is fluffier.And while the first ones were fried, the dough stood and became more liquid (it is logical taking into account the baking powder and soda with kefir), so the second tab was already less fluffy. Well, is that so with everyone?

Pancakes - I bake pancakes in the Orion pancake maker, it turns out 9-10 tabs, all come out the same. The last time I changed the recipe a little: 2 cups of flour, 2 cups of whey, 1 egg, 2 tablespoons of sugar, 2 teaspoons of baking powder, 2 tablespoons of vegetable oil, 0.5 teaspoons of salt. I didn't add soda. I liked the taste better, obviously because the whey was not very sour, and soda is not really needed here.

Soda is not felt, because I measure it evenly and make sure that there are no lumps that do not dissolve in the dough. For my flour, I brought out the optimal weight - 300 g per 480 ml of kefir. I prepare the liquid part in advance. Beat the eggs with a fork, then add the butter and beat again. It turns out a kind of emulsion that mixes well with kefir.
