Wheat-rye bread with pumpkin in a bread maker

Ingredients

Pumpkin puree 150g.
Water 100g.
Wheat flour 1c. 270g.
Rye flour 100g.
Fresh yeast 9d.
Salt 8d.
Sugar 1h l.
Vegetable oil (I have sesame oil) 20g.
Coriander beans 2h l.

Cooking method

  • Grind the coriander in a steppe or in a grinder.
  • Pumpkin puree (I prepare in advance in a double boiler, pack in 150g bags and in the freezer, defrost and use as needed) combine with water, coriander and heat to 37C. Pour HP into the bucket.
  • Grind yeast with sugar, add to the HP bucket. There is also oil.
  • Top with flour, salt.
  • Mode No. 3 Diet 3 hours 30 minutes. Weight 750g. The crust is medium. HP Scarlett Sc-400.

  • Delicious, aromatic bread with airy crumb!

Note

You can use carrots instead of pumpkin.

Good day! I want to express my admiration for this bread. I still can't figure out what makes it so delicious) I've baked it three times already. A little about how I do it. 100 ml of water seems too small to me. I add about 140 ml. Since I don't have a scale, I add a different amount of pumpkin puree each time. But on average it is 3 tbsp. l. with a slide. Like this.

That's how it seemed to me that a dietary one would do here)))))
