Ingredients

dough
wheat flour c. from. 250g
dry instant yeast 1 tsp (4d)
a pinch of salt
sugar 40g
butter soft 40g
warm milk 125g
loose the egg, take 2 tbsp. l. (25g)
filling
cottage cheese 500g
egg 1 PC
sugar 125g
zest or vanillin
small raisins 25g
cream
butter 75g
sugar 75g
egg 100g
flour 8g

Cooking method

  • knead dough in xn on the dough program, give 45 min of fermentation
  • if we knead in a mixer - mix everything until smooth, leave for 5 minutes, then knead until smooth. give 45 minutes of fermentation, crushing after 10 minutes and after another 10.
  • while the dough ferments, we cook stuffing... grind cottage cheese with a submersible blender or through a sieve. add sugar and egg, then zest or vanillin, mix until smooth. if the curd is thin, add 0.5 tablespoon flour.
  • and preparing cream... pour the eggs onto the flour, mix until smooth. Beat butter, add sugar, beat a little more, then pour in the egg-flour mash in portions, whisking after each addition until smooth. you get a smooth cream. incredibly tasty .. better not to try ...
  • Spread the dough on a greased baking sheet. put the curd filling on top, sprinkle with raisins. pour out the cream, spread evenly and sprinkle with almond petals
  • bake in an oven preheated to 200C for 10 minutes, then reduce T to 170C and bake for another 20 minutes. then turn off the oven and leave the cake in it for another 10-15 minutes.
  • thanks to butter cream, a brittle creamy crust is obtained on top of the pie, and on baked juicy cottage cheese it is so delicious that it is better not to approach the baking sheet without witnesses ... then it is difficult to explain where the whole pie has gone ..

Marish, in the original multiply this recipe by 2 - goes to a full baking sheet. but then it turns out a thick dough crust, I did not like it so much, and I make half of the original recipe all on the same baking sheet - 30x40. it turns out kind of thin, but I like it so much - like a cake
